Strawberry (Cinnamon) Rolls

These Strawberry Rolls with a hint of lemon are a must have for Spring. Gooey, fluffy, slightly sweet and heavenly.

Ingredients:

Dough:

¾ cup (177ml) milk

¼ cup (50g) sugar

1 pkt yeast (7g) yeast

⅓ cup (76g) butter

2 eggs

1 egg yolk

3 ¼ cup (390g) flour

½ tsp (3g) salt

Filling: (strawberry jam also works)

2 cups (350g) strawberries

½ cup (100g) sugar

1 lemon zested

1 tsp lemon juice

1 TBSP cornstarch (optional)

Frosting:

4oz creeam cheese

1 cup (120g) powdered sugar

2 TBSP strawberry filling

Directions:

Warm milk to 110 degrees F. Add to mixer with sugar and yeast. Let sit until foamy. Add soft butter, eggs, egg yolk, flour and salt and mix for 6-8 minutes. Dough should be smooth. Cover and let rise till doubled. Make strawberry filling- zest a lemon into your sugar and mix well. add strawberries, lemon juice, and sugar mixture to a pot and cook down till thick and shiny (if you do it long enough you wont have to add the cornstarch) otherwise make a carnstarch slurry with 2 Tbsp cornstarch and 1 Tbsp water and add to filling and continue cooking till thick. Cool in fridge until needed. Roll out dough into large rectangle and cover with filling (reserve 2 Tbsp filling for frosting). Roll up and cut into 12 rolls. Place in 9x13 pan. Let rise again until doubled ~ 30-45 minutes. Bake at 375 for 20 minutes or until done. Make frosting by adding all ingredients to a mixer and whipping till smooth. Once rolls are cooled liberally add frosting and enjoy!
